Pumpkin Chocolate Chip Muffins with Crump Topping

I'll admit that I was an adult before I would even think of eating anything pumpkin related. Pumpkin pie just looked so gross as a kid. It's amazing how our tastes change and evolve as we age.

I love a great pumpkin treat now. I've even had pumpkin pasta before!

As an empty nester, I went through a stage of never wanting to bake at all. It seemed senseless for just the 2 of us. Plus I have an insane sweet tooth. My almost 56-year-old waistline can't take it. We've been hosting Sunday lunches most weeks for our family for about 3 years. It's the perfect excuse to bake sweet treats.

If I make something for the blog, I save a few for us and deliver the rest to my neighbors. I get not only the joy of baking but the joy of sending a little goodie to our friends.

These muffins were a big hit with everyone! My neighbors said that not only did they look like they came from a professional baker, but they tasted like it as well. I'll admit that made me smile.

Recipe adapted from Taste of Home.

Ingredients Muffins

  • Eggs
  • Sugar
  • Brown sugar
  • Can of pumpkin Puree
  • Canola oil
  • Applesauce
  • All-purpose flour
  • Baking soda
  • Baking powder
  • Ground cinnamon
  • Ground cloves
  • Ground nutmeg
  • Semi-sweet chocolate chips
  • Chopped walnuts (optional)

You can certainly stop here and bake the muffins sans topping, but why would you? The topping adds such a nice spiciness to the muffin.

Ingredients for Topping

  • Sugar
  • Brown sugar
  • Ground cinnamon
  • salt
  • All-purpose flour
  • Unsalted butter

Useful Baking Tools

If you are a cook or want to give a newlywed a wonderful gift, a Kitchen-Aid stand mixer is well worth the money. Mine is at least 25 years old. They are a workhorse for sure. My mother gave both of our kids one as a wedding gift. I know they will fondly remember their grandmother when they use it. This is a big ticket item, so I tend to prefer the more neutral colors if it will sit on your kitchen counters.

The Muffin Steps

I use my stand mixer to make the pumpkin muffins, but you could certainly do these by hand.

In a large bowl, you will want to beat the eggs, sugar, brown sugar, pumpkin, oil and applesauce until smooth.

In a separate bowl, combine the flour, baking powder, baking soda, spices, and salt.

Gradually add your dry mixture to the pumpkin mixture. Mix well.

Fold in your chocolate chips and optional walnuts.

If only you could smell the scents of fall!

Next, line 2 regular-sized muffin pans with these liners for a bakeshop look and feel. Divide the mixture evenly to get 24 muffins.

Prepare your crumb topping and blend with a fork.

I am so impressed with these liners. They are one piece and hold together well. They peel away from the muffin with no effort after cooking.

Evenly divide the crumb among the 24 muffins. Just sprinkle it on top.

Bake at 400 degrees for 15-18 minutes. Mine takes 18 minutes. A cake tester should come out clean when used.

Cool in the pan for 10 minutes before removing to a wire rack.

Completely cool on the wire rack before storing. They are yummy and warm!

Pumpkin Chocolate Chip Muffins with Crumb Topping

Make fall baking irresistible with these Pumpkin Chocolate Chip Muffins topped with a buttery crumb topping! Easy to make, full of warm spices, and perfect for cozy mornings or snacks.

Ingredients
  

Muffins

  • 4 Large eggs, room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 can pumpkin puree (15 ounces) (NOT pumpkin pie filling)
  • 1 cup canola oil
  • 1/2 cup applesauce
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 tsp salt kosher
  • 1 Bag semi-sweet chocolate chips (12 ounces)
  • 1 Bag walnut pieces (2 ounces or more)

Crumb Topping

  • 3 TBS granulated sugar
  • 1/3 cup brown sugar packed
  • 1 tsp ground cinamon
  • 1 pinch salt kosher
  • 3/4 cup all-purpose flour
  • 6 TBS unsalted butter melted

Instructions
 

Muffins

  • Preheat oven to 400 degrees.
  • In a large bowl, beat the eggs, sugars, pumpkin puree, oil and applesauce until smooth.
  • In a separate bowl whisk to combine flour, baking soda, baking powder, spices and salt.
  • Gradually add the dry mixture to the pumpkin mixture to blend well.
  • Fold in chocolate chips and walnuts if using.
  • Place 24 liners in muffin tins.
  • Equally fill each of the 24 muffin liners.
  • Top each muffin with the crumb topping.
  • Bake at 400 degrees for 15-18 minutes. A cake tester should come out clean when done. Mine took 18 minutes.
  • Cool in pan for 10 minutes.
  • Remove muffins to a cooling rack. Enjoy!
  • Once completely cool, store in a muffin keeper, cake dome or ziploc bag
  • They are yummy heated in the microwave!

Crumb Topping

  • In a medium bowl, combine the sugars, cinnamon, salt and flour. Use a small whisk or fork.
  • Add the melted butter. Stir with fork until combined and crumbly.
  • Add the crumb topping to the muffins before baking.

Notes

These are wonderful with a cup of coffee. While they are fabulous for a quick breakfast, they are yummy as a dessert. They work well for gift-giving and bake sales. Store in an airtight container. They are wonderful warmed in the microwave.
